A ginger infusion made with three kinds of ginger: fresh, dried, and candied. Ingredients and method after the picture!
375ml of Buck 25 Vodka
1 nice piece of fresh ginger (4 inches)
2-3 dried ginger chips (try Hong Kong Market)
3-4 pieces of candied ginger (try Mona’s)
Peel the ginger and chop into smaller pieces. Add to blender with around 200ml of Buck 25. Blend it up, then add the ginger chips and candied ginger. You may have to add a bit more Buck 25 during the process.
Pour into a glass container and infuse for 2 days. Place the bottle in sunlight for stronger infusion (as needed).
Strain the infusion through cheesecloth or other filter to remove solids. Store in a glass container.
