For this extract, we used 39 grams of fresh rosemary, which was added to a half gallon mason jar. We then added one bottle (750ml) of Buck 25 Vodka.
The vodka doesn’t quite cover the rosemary. Add more vodka; or tamp down with a spoon or other utensil. We tamped it down and infused for about 24 hours.
After 24 hours, the infusion had acquired this compelling green tint. We strained the infusion through a screen and a funnel and put it back in the original bottle. We recovered most of the spirit that was added, over 700ml out of the original 750ml.
We measured the proof and divided the spirit into several sample bottles.
After a fast laser print, it was time to label this edition of five bottles.
The final proof was 121.60, nearly as strong as the original 125 proof Buck 25 Vodka. At this strength, the extract can be used as rosemary bitters. A small amount in a Bloody Mary would be interesting. Any cocktail needing a savory or slightly bitter element could use a few drops. The rosemary infusion could also be diluted and used as a base ingredient in a punch or batched cocktail.
