The trinity of celery, bell pepper, and onion is a key element of Louisiana cooking. This trio of flavors is the vegetable base for gumbo, boudin, and more. These vegetal flavor elements are a nice match for a Bloody Mary and other cocktail creations. Here is our recipe for a Trinity Infusion with our Buck 25 Vodka, which is 125 proof for rapid infusion.
Chop up approximately 800 grams of Trinity (celery, bell pepper, onion). This example used 236 grams green bell pepper, 288 grams celery, and 297 grams onion. Adjust the amount of vegetables to taste. Put the vegetables in a half gallon mason jar or other suitable container. Add approximately 1 liter of Buck 25 Vodka to cover the vegetables.
After infusing for 48 hours, strain off the liquid and discard the vegetables. Transfer the infusion to a bottle or other container. Sample the infusion for flavor and make note of any adjustment for future recipes.
Label the container with the ingredients. The vegetables contain a lot of water, and the proof dropped from 125 to around 65 proof. In some cases it is a good idea to add water after infusing. However, in this case, the final proof is in a good range to use as-is.
