“Ah, the product. On a late summer Saturday, his team and I gathered to test budding versions of the company’s inaugural absinthe, Toulouse Red. We compared the potions as if studying drawings, tasting their composition and color and effect. The darkest ruby, touched by hibiscus petals, was our favorite: a creamy anise nose, fennel on the palate, and a brief flowery tang that flirted with bitterness. Traditional Method for Serving Absinthe

At our bottle sale hours this weekend, several customers had questions about the proper way to serve absinthe. While absinthe is versatile enough to be used in a variety of ways, the classic method of ice water dilution is a great starting point.

Pour 1 ounce or more Toulouse Red in a rocks glass or wine glass. Fill a second glass or small pitcher with ice water. Slowly drip the chilled water into the absinthe, diluting in the range of 3:1 to 5:1, or to taste. Santé!

Toulouse Red Recommendations

The absinthe is floral, herbaceous and quite lovely. It can undoubtedly be expertly used in fine cocktails like a Sazerac, or can be consumed with a splash of ice water. The ice water turns the red absinthe into an almost bubble-gum pink color.
