Our Local Wormwood Plan began over a year ago, when we distributed wormwood seeds to local growers. Over the summer, we received the first harvests and distilled the first batches. The wormwood grew so well, our grower had surplus plants. We transplanted some of these first growth plants to a garden alongside the distillery. Visitors can commune with the wormwood planting during our weekend bottle sales hours.
The first planting. After the plants stabilize in the new location, we’ll harvest the wormwood. Wormwood is a perennial and the plants will grow again next spring. The harvest will be taken inside to dry and used to produce Toulouse Green, Absinthe Verte.
